The origin of butter chicken has a fascinating story, which shows how best things are often created accidentally. It is initially introduced by Kundan Lal Gujral, one of the owners of Moti Mahal restaurant chains in Delhi. In the 1950s, one day he wanted to make use of some leftover tandoori chicken and added to rich tomato gravy, which instantly became a popular dish.

The chicken should be marinated with lemon juice, mustard oil, ginger garlic paste, homemade yogurt, Kashmiri red chilli powder, turmeric powder, salt, and garam masala. The marinated chicken pieces need to be left undisturbed for a few hours so that the flavours of all these ingredients can penetrate the meat. Thus, the chicken also acquires the nutrients stored in these food materials.

The marinated chicken is then grilled or roasted in a tandoor until the meat softens to the desired extent. Gravy is cooked by adding a large amount of butter to the pan, on which onions, ginger, garlic, tomato, cashews, and some spices are lightly cooked. All these ingredients are mashed to form a thick gravy of butter chicken preparation, to which fenugreek, pepper, and garam masala are added for bringing a rich flavour.
